ENCHANTED HERBAL INFUSIONS
Herbal infused homemade oils and vinegars contain all the healing and healthy benefits of the herb used. These herbal oils can be used marinades, salad dressings and sautéing.
Rosemary Infused Oil
For this one we are using a good cold pressed virgin olive, fresh rosemary and dried juniper berries.
You'll need 2 sprigs of rosemary a few inches long, enough to fill a clean, sterilized glass jar big enough to hold 10 ounces of oil. You must make sure the herbs are clean and completely dry before starting your herbal oil. Add 2 tablespoons of juniper berries.
Pour the olive oil over the herbs. Stir lightly to get rid of any air bubbles. Cap tightly and store your jar in a cool, dark place for two to six weeks. Taste your oil to make sure it is the flavor you want, and you can add more olive oil to tone it down or let it sit longer to strengthen the intensity. Should be stored in the refrigerator after the infusing is finished.
